How to Make the Best Breakfast/Lunch/Dinner Burrito Ever

Cut the following into thin, narrow strips:

1/2 onion

2 tomatoes

1 1/2 potatoes

Shred cheese: pepperjack and sharp cheddar are particularly yummy. It's really good without cheese too.

Optional:

yams

asparagus

cauliflower

other veggies

3 eggs

Pour a tablespoon or so of olive oil into a big cast iron pan or, if you don't have one, a regular frying pan.

Toss the potatoes in first and cook them for five minutes over medium heat with the lid on. Stir occasionally. Then throw the other veggies in and cook them until everything is tender. Add eggs now if you want them. Make sure the eggs get thoroughly cooked.

 Sprinkle cheese over the top if you'd like. Add salt and pepper to taste.

Scoop into flour tortillas, add hot sauce if you'd like (I recommend 365 Organic Hot Sauce from Whole Foods), and enjoy.
